Description
Shoulder obtained from the front legs of pigs purchased from small-scale farms in Zamora and Los Arribes del Duero.
This Reserve Shoulder is the result of careful rearing of pigs fed mainly on natural feed, which gives it its flavor and texture.
The aroma and flavor of Puente Robles Iberian shoulders and charcuterie are unique and characteristic thanks to the curing process with pure air and the natural shade provided by the Arribes del Duero region.
Each slice is a unique experience that will transport you to the tradition and authentic taste of Spanish gastronomy.

Consumption
To enjoy the full flavor of the Cesáreo Gourmet Selection shoulder, we recommend consuming it at approximately 24°C.
If vacuum-packed, we recommend removing it from the packaging and leaving it at room temperature for 30 minutes before serving. If it has been refrigerated, this time may increase up to 2 hours.
Best before: 6 months.

Curing Time
Total curing process of 36 months, with only 3 months in a drying facility and the remainder through a fully natural curing process at our facilities.
Storage
- Whole pieces: store in a dry place, with low light and no direct sunlight, at an ambient temperature of 16°C - 25°C. Remove the fabric cover provided and place it in a ham holder or hang it. Save the first slice to use as a cover to prevent the meat from drying out.
- Cut or sliced shoulder: store refrigerated between 4-10°C. Before consumption, let it reach room temperature for 10 minutes.

Whole piece preservation: Unopened 6 months; once opened or in humid areas, consumption is recommended within one month.
Sliced shoulder preservation: Unopened 365 days; once opened, consumption is recommended within 7 days.
In a cardboard box with the product wrapped in a fabric mesh.
Whole pieces between 4 kg and 7 kg in weight.
Remove the mesh it is wrapped in and place it on a ham holder or hang it.
Save the first cut to use as a cover and prevent it from drying out.
