Types of Iberian shoulders according to their breed
At Puente Robles, we understand that the purity of the breed influences the flavour and quality of our Iberian Shoulders. For this reason, we offer you three options:
100% Iberian Shoulder
The 100% Iberian paletas come from purebred Iberian pigs. These paletas are renowned for their deep and authentic flavour, which makes them the most gourmet and exceptional choice for the greatest lovers of the Spanish Iberian tradition.
75% Iberian Shoulder
The 75% Iberian shoulders offer an excellent quality of meat and flavour, with a balance between the richness of the Iberian breed and greater accessibility.
50% Iberian Shoulder
The 50% Iberian paletas are a more affordable option, ideal for those who wish to explore Iberian flavours without compromising on budget. Although the purity of the breed is lower, you will still enjoy a distinctive Iberian flavour.
Difference between an Iberian Shoulder and an Iberian Ham
These are the differences between an Iberian Ham and an Iberian Shoulder, so you can decide!
Origin
Both come from pigs, but the main difference lies in the part of the animal from which they are obtained. The ham is obtained from the hind leg, while the shoulder is obtained from the front leg.
Flavour and texture
Shoulder meat tends to be slightly more tender and juicier than ham due to differences in the musculature of the front and hind legs. In addition, the flavour can vary slightly, with some people preferring one or the other according to their personal tastes.
Size
Shoulders are smaller in size compared to hams, making them more suitable for consumption in smaller groups or for those looking for a more manageable option.
